The practice of fermentation and bread baking, as well as sharing experiences and selling Panicuocoli bread, is part of an academic research project that is both conceptual and experimental. This project reflects on the relationship between conviviality and symbiosis, with the aim of exploring and allowing the emergence of a deep connection between these two realities and their closely linked meaning.

Bread is conviviality: being together, relating, and coexisting. It allows us to overcome individuality and deprivation associated with the industrial production system. With Bread we are reclaiming creative space and practices, vital dimensions and the possibility of enjoying the results of one's labour.

Bread is symbiosis: a microcosm in which yeasts and bacteria transform matter during fermentation, in which all elements are connected and in which (even) the human being plays a fundamental role at the same time inalienable and of invisible interdependence
